Recipe Roundup: Chili

So it’s a Friday night at the end of an exhausting week, and all I want to do is watch a show with my husband and relax. However, I made a commitment to post weekly as part of Weekly Writing in October, and today is the last day to get a post up for this week, so I’m going to try to put this together really quick.

One thing I’ve been wanting to write about for a while is my favorite recipes. Since I’ve become a work at home mom, I’ve taken over the primary cooking responsibility in our home (which for us means I am in charge of weekday meals, and Clint is in charge of weekend meals). Oddly enough, considering that at one time I was an extremely picky eater, and when Clint met me I wasn’t much of a cook, I’ve really embraced this role. I don’t mind cooking, but I think what I really like is the eating, hehe. So I thought it would be fun to start a series on the blog where I share some my recipe favorites.

I’m going to kick it off with chili recipes, as I love a good chili, especially this time of year. I hope you find some inspiration. 😊

Pumpkin Turkey Chili

Pumpkin Turkey Chili

This week I actually tried a new chili recipe that I thought was pretty tasty and kind of seasonally fun. I found it at All Recipes. I followed some of the suggestions from reviewer Ashley White because I know that turkey recipes can be a bit bland if you don’t add enough spice. I seasoned the turkey as I cooked it with salt, pepper, and chili powder. Once it finished cooking, I popped the chopped onions in and let them cook in the grease from the turkey and a little olive oil, plus I seasoned them with salt and pepper. I happened to have some leftover red onion from a recipe I made earlier in the week, so I mixed a little red onion in with my yellow onion. I also used her tip of substituting Great Northern beans for chili beans, and I subbed out half of the diced tomatoes with fire roasted tomatoes. I added in the green chilis, but not the diced jalapeños. I definitely went with the canned pumpkin puree because that is so much easier than buying an actual pumpkin. I thought it turned out flavorful without being overly spicy, so I was happy with the modifications.

Clint and I really like Rachel Ray recipes, and this is an excellent chili recipe from her I discovered in one of my cookbooks, but you can also find it here. It’s unique and flavorful, but it can get rather spicy, so you might want to go easy on the hot sauce. This is the only one that is not a crockpot meal.

Blue Ribbon Chicken Chili

img_6411I haven’t made this one yet this season, but I remember really enjoying it. I used to have a subscription to She Plans Dinner, which is where I got this recipe, but you can also find it here. The tortilla chips and sour cream on top add a little something extra too.

So I guess I didn’t manage to take a picture of this chili when I made it, so I’m borrowing the picture from Recipe Tin Eats, where I found this recipe. I actually did a web search to find this one because I really wanted to find a good shredded beef chili recipe, and I thought this one was quite delicious.
